Fortalezza Tequila Dinner at Foundry On Elm!

Join Foundry on Elm’s Beverage Director, Manny Gonzales and Executive Chef Alex Jenkins for a Fortalezza Tequila Dinner on Tuesday, June 24th, complete with four-course of Latin-inspired dishes paired with four tequila cocktails.

Guests are invited to taste through Chef Jenkins’ four-course dinner menu infused with Latin flavors, each course carefully paired with a crafted tequila-based cocktail by Gonzales and inspired by Mexican dishes, history, and his own experiences. Fortalezza representatives will be in attendance to describe the intricacies of their different tequilas.

The Mexican-inspired menu includes:

Passed Course:
Spicy Salmon Tartar on Plantain Croutons
La Hermosa (“The beautiful one”) – Blanco Tequila, Agave Liqueur, Agave Syrup, Lime, Spicy Cucumber Brine

1st Course:
Pan Seared Chili Rubbed Sea Scallop - Jicama & Melon, Lime Orange Vinaigrette, Ancho Puree 
Bahia Kino – Resposado Tequila, Spiced Pear Liquor, Lime, Guava Puree, Smoke Cilantro

Main Course:
Roast Yucata'n-Style Chicken - Smoked Tomatoes, Chickpea Polenta, Queso Fresco 
El Taxco Volador – Anjo Tequila, Dolin White Vermouth, Cardamaro, Noccino Walnut Liqueur, Amargo-Vallet, Fee Oak Aged Bitters, Hell Fired Bitters, Candied Serrano Pepper.

Dessert:
Mami Ahogando – A play on an Italian classic called Affigato – Resposado Tequila, Dry Curacao, Fair Coffee Liqueur, Mexican Coffee, Dulce de Leche and Serrano Ice Cream
